2021 Yin & Yang White

Most white wines are made by pressing juice from grapes and fermenting it, then discarding the skins and stems. But, skin-fermented white wines hang out on the skins during fermentation and soak up all that grape tannin and natural fruit funk. The result? A hambone-dry white wine that is as orange as it is free. Fermented naturally on wild yeasts, this wine is all dried apricots and wet sidewalks on a spring-time stroll through awesome-town.
